Hello there. My customer has a problem with no SEO settings for shop categories (through edits) and missing SEO settings for shop categories.
My question is - can I remove and reinstall the shop app without losing data for category/products/sale history, etc.? Should I do this by dashboard or site editor?

I’m unable to replicate this on my end even with a new site within the Wix Editor.

You could try as you mentioned deleting the application and when it’s reinstalled, everything will be back though possibly the design on the website might need to configured and setup again. If that doesn’t help, I’d recommend reaching out to customer support to report this.

I’m not entirely sure, but I believe I’ve encountered this issue before. If I recall correctly, it was related to a newly added website template with an existing store app. In that case, deleting and reinstalling the app resolved the issue, but the store hadn’t made any sales yet. In this situation, the app has been active for quite some time, so it’s a bit different.
I’ll discuss your response with the client and see how she’d like to proceed.
